Grover Zampa launch Chêne at The Westin Pune Koregaon Park

ZampaA blend of Tempranillo, the famous indigenous Spanish red grape, and Syrah, Chêne Grande Reserve, produced from estate grown grapes at their winery in Sanjegaon, near Nashik, is Grover Zampa's latest offering. "We have always produced wines with French grapes, so thought of trying something different. We planted Tempranillo and Grenache, and the Tempranillo has come out very well", said Sumedh Singh Mandla, CEO, Grover Zampa Vineyards Ltd.

Chêne - meaning oak tree in French - is inspired by the oak tree, a symbol of pride, strength, majesty and longevity, as well as indicative of the 15 months maturation the wine enjoys in oak barriques and another 15 months of bottle ageing to allow the flavours, colour, mouth feel of the wine to develop and integrate, and the tannins to soften.

Sujeet Kumar, General Manager, The Westin Pune Koregaon Park said the hotel took great delight in hosting the wine dinner at Prego as guests could enjoy the new signature wine paired with an exquisitely curated menu by Executive Chef Anurudh Khanna. Mandla introduced the different Grover Zampa wines being served; mentioning their attributes and awards received.

The evening commenced with the Zampa Soirée Brut served with light eats, and then unfolded over the special multi-course meal paired with various Grover Zampa wines. The colourful and flavourful antipasti of Just seared yellow fin tuna with basil aioli and scallops with passion fruit chutney for non-vegetarians and the vegetarian Twice cooked fresh artichokes and young courgettes, organic beetroot and borage blossoms were served with Grover Art Collection Sauvignon Blanc 2013, and followed by a delicious Goat cheese mousse served with Grover Art Collection Shiraz Rosé.

The main course presented a choice of gourmet options - Baked Halibut poached lobster tails asparagus bundles, salsa verde; 10 oz Prime U.S. Sirloin grilled and served with potato gratin, rosemary shallots and tossed spinach; Agnello Scottadito grilled lamb chop, roasted baby potatoes and spinach raisins; and Forest Mushroom Medley truffle risotto, baked portobello and porcini mushrooms, saffron foam paired with Chêne Grande Reserve 2010 and the long-time favourite Grover La Reserve 2011. The dinner concluded with a delightful Dark Chocolate Marquise served with marshmallow ice-cream.

All the effort of producing Chêne Grande Reserve was evident in the goblet as guests enjoyed its wonderful ripe black fruit as well as vanilla, chocolate and oak flavours, and well-integrated mellow tannins. Perfect with a meal or by itself, it charmed the palate with its gentle flavours and tannins. With understated pride Mandla described it as the most premium Indian wine. Only 3,000 bottles, each individually numbered, have been produced this year.

Reflecting Chef Khanna's philosophy of playing with colours, textures and flavours with fresh ingredients, but staying true to techniques with a subtle twist in each dish, the dinner was excellent, made special with the happy meeting of a wine that spoke of passion and cuisine prepared to delight the senses.

Chêne is priced at Rs 1700 and is available at select outlets in Mumbai and Pune, Maharashtra.
